I’m sorry to hear your popsicles are turning out icy Elias! That ‘issue’ generally comes from the specific coconut milk you’re using (the more water/less fat it has, the more ‘icy’ your popsicles will be). You can also try using more of the cream in the can (i.e. the solid bits) and the xanthan gum will help also to stabilize the mix. Hope this helps xo!

They freeze so solid and become full of ice crystals. The flavor is a amazing but they’re literally hard as ice cubes also making them impossible to remove from the mold. I ruined a good silicone tray doing this. I added cinnamon to mine and a dash of chili powder to make them Mexican chocolate so they were even better. I just need to know how to have a creamy popsicle instead of an icy popsicle. I only used the 1/8 of xanthum so they’re weren’t gummy at all but that was probably because they were pure ice crystal. Any suggestions?

You can buy pure monkfruit extract powder, as well as monk fruit mixed with erithrytol, from Lakanto.com! It’s pricey, but a little goes a long way! 🙂

I found this recipe a couple of moths ago in my email and I have been making them weekly since then. The best keto friendly popsicle recipe I have tried! I made a double batch of the base mixture (without the cocoa) and split it to make half fudge/half lemonade strawberry the first time and fudge/salted caramel the second time-sooo good! I add 1/2 cup heavy cream per recipe because my molds make 6 pops, and it even leaves a little extra to freeze in a cup to eat like ice cream. Outstanding!

Absolutely delicious! Thank you for helping us indulge without the guilt!
I followed your suggestions and I made a few modifications to accommodate my personal preference in taste (don’t like a strong chocolate flavor). This was my first time doing something like this and wow, I impressed myself…so good! just a perfect balance of flavors. These were my modifications:
• 3 tablespoons of Monk Fruit
• 2 1/2 tablespoons Organic Cocoa Dutch Process
Optional add-ins: I used xanthan gum and vanilla extract . I also added shaved coconut (I added it to the bottom of the mold and top, although aesthetically pleasing, it gets messy while eating so I will mix it in next time.
