As many of you long time readers know, we launched our very own keto pasta (gnooda!) a couple weeks back in a VIP sale… and have sold out continuously! Happy to report that we’re back in stock today, and will keep things rolling now.

What to expect? At just 3g net carbs (an actual serving!), it cooks like pasta, it tastes like pasta… it is pasta! Plus, it just so happens to be nutritionally dense (no fillers here!) and artisanally (think age-old Italian techniques!).

And I’m particularly over the moon that you guys have reported back with raving reviews (feel free to read through your solid 5 star ratings here)! Let’s just say that ‘life changing’ has been a common thread lol.

For The Keto Marinara sauce

I’m always going to advocate taking the homemade route when it comes to marinara! Its easy, quick and it truly leads to incomparable results. Highly suggested: whip up a large batch and freeze as needed!

Having said that, to make things (extra!) easy, you can always grab a jar at the store. Rao’s marinara is the best I’ve tried so far, and one of the few out there that doesn’t have sugar as an added ingredient.

About That Cheese

I used freshly grated mozzarella here, but you can get a little extra here by adding in some real parmesan (i.e. parmigiano reggiano!) or even pecorino to the mix.

Honestly? Any good ‘melty’ cheese will work superbly!

And Some Extra Add Ins!

While just marinara and mozzarella more than do the trick, there’s beauty in simplicity after all right?! You can add in a few more things such as olives, sun-dried tomatoes and even ground beef (think a Bolognese-style bake!).

Using our (3g net carb!) gnooda pasta, this low carb and keto cheesy pasta bake is bound to become a favorite quickmeal staple! Expect an ultra cheesy and incredibly flavorful comforting delight.

Instructions
 

  • Preheat oven to 350°F/180°C and set aside a baking dish.
  • Bring 8 cups water to a rolling boil and add enough salt so it tastes like the ocean (about 1 1/2 tablespoons).
  • Add gnooda and stir immediately. Cook for 5 minutes (p.s. expect a bit of foam!), strain, bring it back to the pot and mix in the marinara sauce gently.
  • Transfer to baking dish, top off with a (very!) generous amount of cheese and bake for 5 minutes, or until cheese is fully melted. Serve right away with ribboned basil leaves.

Notes

Please note that nutrition facts were estimated for the keto pasta (3g net carbs a serving!), with Rao's marinara and mozzarella cheese. So a generous serving comes out to just 5g net carbs, but be mindful that this will vary depending on how much sauce you add.

    Love this pasta!! I made that baked feta pasta that had gone viral substituting regular pasta with nooda pasta and it came out amazing!!!

    Quick question, do you know what the shelf life of the pasta is? I live alone and on a tight budget, I dont mind spending money for a quality product but 4 bags would take me a while to use, lol. Congrats on your success! ❤

    I wish I didn’t have to rate your recipe, yet but I now it’s going to be a hit. I plan to add ground beef & Italian sausage, onions and green peppers to mine in a version I make for my kids. I just purchased the pasta and am waiting for my order. A member of a group to which I belong posted his recipe saying how happy he was with the pasta. I went to the website and saw your moniker (gnom gnom) and went ahead on just that basis alone (plus I have read good things about the lupini bean) and because I trust your judgement as it applies to keto.     Got my gnooda delivery last week and made this recipe last night with some ground beef. Was so excited about it, I forgot the basil but it tastes amazing! I halved the recipe so I could save the bolognese beef I made to have with the pasta on its own. Very impressed, looks like pasta, feels like pasta, tastes just like it too!

    • If you found it ‘too al dente’ Christine I would suggest cooking it for a bit longer. I personally do 5 minutes, but do feel free to play around with it (though I wouldn’t suggest going past the 8-9 minute mark). xo!

      Curious, has anyone tried an Instant pot recipe (time) with this pasta? (with standard pasta, the Cook time in an instant pot is 4 mins, with a natural release time of 10 mins.) keen to hear your answer….

    The noodles are identical in red pasta applications, but I tried them in a wonderful cheese sauce and the results were less than desired I’m happy to have the marinara option, thanks for making these available

    I cook for a mixed crowd… kids, a conventional diet eater, someone with IBS, and a diabetic. Everyone loved this and said they were completely happy with nooda rather than regular pasta.
    I skipped the baking step and just stirred in parm and mozz at the end. I also added cooked ground beef and zucchini… this was a huge hit!

    I adore this pasta and now have a house overflowing with it LOL. I made a similar version to this, just used my homemade meat/italian sausage sauce… delish! I asked a question last week that wasn’t posted, about how the pasta would hold up in a cold pasta salad as leftovers. I can say that I have just made a 3rd batch of pasta salad using both a mayo base as well as a vinaigrette base and this pasta does SO well! It is actually better as leftovers because the pasta softens a bit more. I took some to my non-keto family members and they raved about the pasta salad and never would have guessed it was so low carb!! I’ll still using about 25-30g per serving and it’s a perfect amount…very filling! I also reiterate seriously salting the water so it tastes like the ocean 🙂 It makes a big difference in the taste of the pasta. This pasta is life!!!!

    Oh my goodness!! I ordered the pasta! It is amazing! I used it to make a keto friendly version of the Louisiana Chicken Pasta served at Cheesecake Factory. Worth it. I had the suggested serving size. It taste like wheat pasta (which is not bad) but then again I undercooked it because I had plan to reheat with sauce. I figured it’s best to under cook the over cook since it was the first I’m using it.
    I posted about it in my Instagram and tagged both your pages. My coworker already said I sold her in it and is placing an order.

    I’m so excited about all the possibilities with this pasta! I left a review on your site last night, and after just one serving, I ordered another 3 cases lol. I found that 50g was way too much for me, and have since found that 25-30g is the perfect amount, which I’m sure will change depending on what recipe I’m using it in. I just received my grocery order that included ingredients for recipes that will revolve around this pasta!!! I just received a haul from Thrive Market that included all the varieties of their brands of pasta sauce, which I really like and is a little less expensive and I save an extra carb lol (no sugar, fresh ingredients, 4g net carb for 1/2 cup), so this pasta is going to get a lot of use in my life!! I’ll end up getting 6-8 servings from each bag which makes the cost per serving amazing! Thank you for the bottom of my heart for letting me enjoy pasta again!! Quick question, I’m going to make a ranch pasta salad (can’t decide on the base… either mayo based using the Thrive Market ranch packet or a vinaigrette base), do you think one would hold up better than the other in the fridge a few days? I was planning on making a batch with 3-4 servings but worried about how it will hold up. I’m going to toss in some marinated lupin beans just because it seems like the right thing to do LOL!!!!

    Hi Paola, I just received a case of Nooda and am a little nervous about using it. Have you done any glucose testing to see how it impacts you? I know we are all different r but just wondered if you’d done any N=1 with Nooda.

      I ordered this stuff the minute it came out. Yes, I thought it was a bit pricey – as are most keto products – but BELIEVE me, this pasta is VERY filling! For me a one cup svg is way too much. Half a cup works for a main dish, 1/3 cup for a side. So far I have made a macaroni salad, a teriyaki noodle side, and next will be trying this bake with ground beef and some low carb ricotta. Then it’s off to making mac-n-cheese! I am HOOKED on this stuff!!! Like I have said before, my only problem is that when I finish cooking it I can’t stop eating it plain right out of the strainer before it even makes it to my plate!

    So excited to try my noodas that arrived today. Invited a guest. Steaks, grilled veggies, green salad( fresh picked) and noodas with butter, Parmesan and a sprinkle of garlic salt. When I finished eating, I had steak leftover for lunch tomorrow but I ate my share of the noodas. They are delicious!!!!

I’ve learned that I need to be careful of total carbs and glycemic response Of individual food choices, in addition to keeping my net carbs under 20.     While the keto police on my diet plan might have burst a blood vessel over pea protein and tapioca flour, for me to have “real” pasta again which fit into my carb count AND used lupin flour was a miracle! We made the recipe as written, only we added a pound of ground beef. DELISH…suddenly I was back in my comfort food days! Thanks SO much Paola! Thank you…thank you…thank you! This pasta is SO on my regular shopping list from now on. Next week–tuna noodle casserole!

      • I’m sorry you feel that way Kenny, but I think we ALL know how expensive Keto ingredients are (and this translates directly into wholesale). Still, we managed to create a product that comes to less than $2.30 a meal… which is way less than even fast food, and you can’t compare the quality. xo!

        I get a lot of servings out of each bag, easily 6-8 servings. For true Keto pasta, it’s more than worth it! I bought 4 cases, lol. When I break down the cost per serving, it’s a no-brainer to be able to have real pasta again that is healthy, tasty and filling.

    I received my shipment last night and made this at lunch. It is so so yummy! And filling! (I didn’t realize what empty calories really were until I started eating nutrient-packed keto diet.) The texture reminds me of whole wheat pasta. The mouthfeel is not 100% like traditional pasta, but I’d say it’s 90% there! I am so, so excited about all of the possibilities. I love the shape!     I’m so happy to see a baked recipe with the new pasta! I made chicken parm (with the baked chicken tenders recipe from this website, which my Mom declared better than any chicken she has ever made in the oven, and she made what I considered the best breaded chicken with breadcrumbs when I was a wheat eating kid!) And had it over this pasta. It was one of the best meals I’ve ever eaten!

    I can’t wait to make mac n cheese with this pasta 🙂
