I’m giving these five stars already as like someone commented on your IG, your brown sugar cookies are my favorite cookies ever mind-blowing how they taste, as were the marshmallows. Please keep the simple recipes coming, long time gnom-gnom fan and I’ve even baked the bread with 20 ingredients, but the ease of the new recipes is appreciated particularly since the results are still outstanding. I still don’t understand how your recipes are a mile apart always, even using pretty much the same ingredients. You just change a few things around the methodology and wow. The marshmallows tasted just like you said, artisanal and were delightful to make s’mores with as you could really smell the maple there. Thank you for helping me create beautiful memories with my kids, we had a lovely weekend around the bonfire that I’ll always cherish. Blessings sweet Paola.

Great question Margaret (and I should’ve prob written a note about this!): since the keto marshmallows don’t have any sugar they lack the “candy making” properties which would allow them to be baked without simply oozing out of the cookies.

I know its not the same, but I would make marshmallow sandwich cookies and dip them in chocolate (kind of like my wagon wheels! https://www.gnom-gnom.com/gluten-free-keto-wagon-wheels/)

p.s. for anyone wondering why there are internet recipes that claim to do this: I dunno, but don’t let them fool you into thinking you can melt keto marshmallows successfully :-S
