Part of our desserts-for-1 series, this keto chocolate pudding is bound to satisfy any and all (individual!) cravings. Suuuper thick, creamy and silky smooth, it’s a true decadent chocolate treat!
Having said that, using only good-for-you ingredients and the ideal macros for a fat bomb treat. Read up!
Cacao vs Cocoa 🍫
Both work great. But our favorite will forever be the Dutch-processed alkaline cocoa Valrhona, known to be one of (if not the) best cocoas in the world. But feel free to use a raw cacao powder (arguably more nutritional perks here). Both are well and good, as long as they’re unsweetened.
Plus, cacao provides a myriad of benefits. Ranging from a rich concentration of antioxidants, to calcium, carotene, thiamin and magnesium (essential if doing keto!).
The Avocado 🥑
Yup, this is a (part) avocado chocolate pudding (and it’s absolutely scrumptious!). Bursting with flavor and with a killer creamy texture, the avocado makes this chocolate treat a true nutrient gold mine.
You are very likely already aware of the myriad of benefits behind avocados. As aside from being rich in omega-3 fatty acids, they’re also a great source of vitamins C, E, K and B-6. Plus, they’re also booming with pantothenic acid, magnesium and potassium.
Having said that, for the sake of taste, we add in some full-fat coconut milk to the mix. As well as some cinnamon, vanilla extract, salt and coffee (optional) to amp up all the chocolate goodness.
The Sweetener 🍯
Pick your poison.
Though do note that we like Swerve or xylitol best here. No funky aftertaste.
Fun fact: it might also be our taste buds here, but we’ve noticed that stevia-based sweeteners (such as Pyure) don’t work so great when chocolate is involved as the aftertaste is accentuated. Again, it might just be our taste buds here!
If paleo, feel free to use some good-old maple syrup.
And if using xylitol, make sure to be careful if you have a pup around the house, as it’s highly toxic to the little guys! 🐕
Paleo & Keto Chocolate Pudding-For-1
Ingredients
- 80 ml full-fat coconut milk
- 10 g cocoa powder or raw cacao (to taste)
- 2 to 3 tablespoons Swerve or xylitol (to taste)**
- 100 g avocado about half an avocado
- 1/2 teaspoon vanilla extract *
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon instant coffee optional
- 1/8 teaspoon kosher salt
Instructions
- Add coconut milk, cocoa powder and sweetener to a saucepan over medium heat. Heat up, whisking to combine, until the ingredients have incorporated (though you may still have a few cocoa lumps). You do not want to warm it up too much, rather just use the heat to combine the ingredients. Remove from heat.
- Stir in vanilla extract, cinnamon, coffee (optional) and salt. Add avocado and blend using an immersion blender. Alternatively transfer to a food processor and blend until silky smooth.
- Taste for sweetness and seasoning and adjust accordingly with more sweetener or salt. Transfer to serving glass and either enjoy at room temperature or chill until fully set (our preference). You can always pop it in the freezer for 15 minutes, and keep in mind that this chocolate pudding keeps well in the fridge for a couple days.
- If you're feeling fancy: garnish with grated dark chocolate and flakey sea salt!

A nice recipe.
But it’s odd that you repeatedly warn readers about the dangers of xylitol to their dogs/pups, while ignoring the fact that your main ingredient (cocoa powder) is just as toxic to dogs.
Also, using cassia cinnamon (store bought cinnamon) is toxic to your liver if taken everyday in amounts of 1 teaspoon or more. It has high amounts of ‘coumarin’ which is a toxic substance to your liver.
While your recipe only calls for 1/2 teaspoon, that’s still a lot of cinnamon for just a single small serving of pudding (just 2 servings would put people over the safe limit; with no warning to them, as you did with xylitol).
Ceylon cinnamon is the only healthy cinnamon that can be eaten in unlimited amounts, as it has almost no coumarin. But it’s rather expensive for most people and can’t be found in most local stores.
John I feel like pretty much every single dog owner (and person?) out there already knows about the dangers of chocolate, xylitol is a niche ingredient that lacks the same awareness… 😉

Good! Very easy to make. Firmed up nicely overnight in the fridge. Used 2 tbsp erythritol per serving. Added a touch more salt plus a little soy sauce to cut the avocado taste. The instant coffee added a lot. I might double that next time. Made 5x the recipe, which made a very large batch filling over half of a large container. Might try adding almond extract next time. Must try with Valrhona for a more chocolatey taste. Ate a serving for breakfast. Why not? It’s healthy.
I also would like to know if heavy cream could be used instead of the coconut milk?
Just made this with heavy cream and it worked wonderfully. I didn’t measure the exact amount though, just added a little bit at a timetill it was the consistency I wanted.
Made this tonight and loved it! I made a double batch and used 4 tbsp of Monk Fruit sugar (powdered) and it was just the right amount of sweetness for me and no grit at all from the sweetener. Enjoyed the addition of coffee, cinnamon and a smidge of salt which bring out the luscious chocolate flavor (and I used Hershey’s dark cocoa powder). I find a full serving a bit too much so am eating 1/2 servings which lowers the carb count (my daily total is supposed to be 20 or less – it feels decadent to enjoy some chocolate for just 2 carbs). Next time I plan to try it with unsweetened coconut flakes and chopped almonds to enjoy a bit of Almond Joy taste. Thank you for a great recipe (as usual)!

I have tried many of the “magic” avocado puddings and ice creams and yuck! Straight to the trash! This one, however, is legit! Not even a hint of avocado! Smooth, thick and delicious. I doubled the recipe because no one wants half an avocado lingering around. I used mainly the cream off the the can of coconut milk, swerve for sweetener and scooped a couple Tbs of peanut flour into the chocolate mix because, well, why not! Ha! Just delicious! I was wondering if by using the avocado and keeping the pudding for a few days, covered(of course), the avocado would cause the pudding to become runny and break down. Obviously since the pudding is chocolate the change in color from the avocado wouldn’t be noticeable. Just curious about the texture.
I made this today but used 2 whole avocados. i.e.- I quadrupled the recipe.
I entered all the ingredients into my Cronometer app. Divided it into 6 servings. Yet, the app shows the recipe to have 15 net carbs per serving!!!

HI Hope! You know what I really don’t know?! I have used avocados for ice cream before and it does work, so I’m leaning towards a yes (maybe worth trying with a small amount!) xo!
So I thought I would make a small amount of this tonight to test it out, but only have 1/3 cup avocado (67 grams) on hand. If I only use this much, and keep all other ingredient amounts the same, what can I expect as far as how it might change the taste? Would you recommend altering the amounts of the other ingredients to accommodate for this instead?
I made this today with macadamia milk instead of coconut milk. It didn’t set up or thicken like pudding. I also tripled everything to make three times the servings. Any idea why it didn’t set up?
The macadamia milk did the trick. Unfortunately you need full-fat coconut milk to get it thick here Beau, as it’s MUCH thicker and will actually solidify xo!
I so want to make this recipe, but I am so leery because of the macros. I am on keto and this is way over my limit. Yes, I have read the comments, so I checked my app and these are my macro – Calories 165.5
Total Carbs 25.5g – Net Carbs 4.6g – diabetes carbs 10.6g – Fiber 9.3g – -Sugar 0.7g –
Sugar Alcohols 12g – Protein 4.0g – Fat – 12.8g – Glycemic Load 1.4. so disappointed. Maybe I will still make and just eat a teaspoon full of it. I have tried a few of your recipes and they are very good.

= 3.7g net carbs!
… which is even lower than the 5g net that I have written down 😉 Also I don’t know what diabetes carbs are? xo!
This was great! My whole family loved it. I didn’t add instant coffee, but I did add the cinnamon and would probably omit it next time, but I will definitely make this again. Quick and easy and delicious.

Hey Paola, I bet that’s it. The app just lets you tell it the url of the recipe and then it uploads it with all the deets. Most likely it didn’t account for the sugar alcohols. Can’t wait to try it!

Hi, just wanted to confirm the macros…when I import the recipe into Carb Manager app, it says 1 serving is 37g net carbs (48g total, 11g fiber). The fat, protein, and calories (33g/6g/350kcal) seem close enough, but I stay under 20 net carb per day, so…….. 🙂

Hi Michael! Are you inputing the sweetener? Remember that erythritol and xylitol are sugar alcohols and not regular carbs (which go undigested through most peeps’ tracks). So it’s common practice to leave them out of the carb count, unless you have a fancy section for sugar alcohols (as many store-bought products do). xo and so happy you’re enjoying the site!

I tried the recipe. It was very good. However, I ‘m not sure that it is Keto. After tallying up my macros for the day, I added the individual carbs for Swerve, and 1 teaspoon is 5 grams of carbs. One tablespoon equals 3 teaspoons, so 2 tablespoons of just the Swerve portion alone is 30 grams of carbs. As per the single serving recipe, the carbs amount to 60.2 grams. (Since it was rich, I ate only half.) I might try to add stevia if I make it again. My goal is to only eat 20 grams of carbs a day, so I can’t make the recipe as is.
Hi Kim! It’s absolutely keto! Regarding Swerve, remember that it’s not a carb but a sugar alcohol. And as it goes undigested through most peeps’ tracks, it’s left out of the actual carb count. I’m also not sure how you ended up with 60g, as non of the other ingredients are that high in carbs either (I also stay under 20g net/day). I suggest you read up more on sugar alcohols xo!
I thought I would reply, as I am a type 1 diabetic and wear a continuous glucose monitor. If I eat any carbs I didn’t account for, I will definitely know within minutes as my graph with start climbing. Erythritol does not affect blood glucose levels and is not included in your carb count. The only carbs are from the avocado, which are quite minimal (and ones I don’t even bolus for). I didn’t bolus for this and my blood sugar is fine. If I ate a handful of blueberries, on the other hand, I’d be spiking.

I have tried so many recipes for avocado chocolate puddings and nothing worked until this one. I urge everyone to make it exactly as it is! I think the game changers are mostly the salt and cinnamon. The cinnamon does give it a more mexican chocolate flavor, but gets rid of any avocado trace. THANK YOU! My kid loves you already
